Learn to cook with farm fresh Ricotta in two traditional ways. Join Luisa and Jody from Dancing Ewe Farms as she shows you how to use their ricotta to make GNUDI, a pillowy dumpling whose name suggests a “Naked”, or unwrapped ravioli, and MOUSSE DI RICOTTA, A ricotta mousse with fig marmalade. In this hands on workshop you’ll go home filled up with good food and great recipes. Dancing Ewe Farm produces authentic Italian cheeses and Salumi, crafted exactly the way Italians have for generations. Jody and Luisa are dedicated to preserving the techniques, traditions, and recipes used in producing superior and authentic Italian style products, and are dedicated to spending the extra time and effort it takes to create them. Their products can be found at many restaurants in NYC, including Daniel, Babbo, and Luppa, as well as here in Troy at the Troy Farmer’s Market.
