Join Dancing Ewe in the kitchen and learn how to use pancetta in two of the most well known sauces in Roman and Italian cuisine. Luisa will lead you through the steps to make an authentic Amaticiana and Carbonara using Pancetta from their farm. You’ll leave with the recipes and skills to make these dishes at home. Dancing Ewe Farm produces authentic Italian cheeses and Salumi, crafted exactly the way Italians have for generations. Jody and Luisa are dedicated to preserving the techniques, traditions, and recipes used in producing superior and authentic Italian style products, and are dedicated to spending the extra time and effort it takes to create them. Their products can be found at many restaurants in NYC, including Daniel, Babbo, and Luppa, as well as here in Troy at the Troy Farmer’s Market.
